I absolutely adore Spanish cuisine and Paella is such a family favourite, you can incorporate so many flavours such as spicy chorizo, big juicy king prawns, diced chicken flavoured with smoky paprika and a hint of tangy lemon. It may seem like a complicated meal but really it is a greatly simple one pot dish.
Paella featuring chicken, chorizo and king prawns in 8 easy steps.
Ingredients to serve 4 people:
- 400g pack of diced chicken
- 300g pack of king prawns (raw or cooked)
- 80g of chorizo
- 400g of spanish paella rice
- 500ml of boiling water or chicken stock
- 2 shallots
- 1 packet of green beans
- 1 red pepper
- 1 lemon
- 2 tsp of smoky paprika
- 1 small bunch of parsley
- salt , pepper & olive oil
Heat the olive oil to a high temperature in a large frying pan or wok.
Add the chopped shallots and the chicken – cook until sealed and the shallots are soft.
Add the chopped peppers and chopped green beans.
Slice the chorizo and pop in the pan and give a good stir to start infusing flavours, sizzle for 5 minutes.
Add the desired amount of paella rice (400g for 4 people) and the 500ml of water/stock (add more if necessary). Leave to gently simmer on a medium heat for 12 minutes.
Meanwhile prep the lemon, cut into quarters and roughly chop the parsley.
In the final 3 minutes add the king prawns, season with salt, pepper and paprika and stir well.
Once the prawns are pink, squeeze the lemons as you add each quarter whole and sprinkle the parsley.
The paella is finally ready for serving, the lemons really add the final citrus twist and make you feel like you are on a veranda in Galicia in the heat of summer. Enjoy with a glass of Albarino or Rioja wine – crisp and clean spanish wines.
